Wash and soak dal for 20 minutes, transfer soaked dal in a pressure cooker, 1 tsp salt, turmeric powder, 250 ml water and cover the lid. Take 2-3 whistles on medium flame. Switch off the flame and allow it to cool. Add chopped brinjal, drumsticks, pumpkin in a vessel, add 1 glass of water, salt and allow to cook them for 5-6 minutes on medium flame. Vegetables should be half done.For tempering, heat 1 tbsp oil, crackle mustard seeds, add hing, chopped onion, green chilis, curry leaves and cook fora minute. Add red chili powder, turmeric powder, coriander powder, sambharmasala, cook for a minute. Add cooked vegetables in tadaka, Cover and cook till vegetables are cooked properly. Add tamarind paste, jaggery, boil for 2-3 minutes,switch off the flame, add fresh coriander and serve hot.
