Yellow meethe rice is also known as zarda, zafrani pulao, kesariya bhaat. It is specially prepared for Ma Saraswati Poojan. Prepare tasty and perfect meethe chawal with this simple and perfect recipe.

½ cup rice
½ cup sugar
2 tbsp desi ghee
Soaked saffron strands
A pinch of yellow saffron food colour
1 tbsp sliced almonds
1 tbsp sliced cashews
1 tbsp dry coconut slices
1 tbsp raisins
¼ tsp cardamom powder
¼ tsp nutmeg
1 bay leaf
4 cloves
Soak rice for 20 minutes. Boil 3/4 cup water, add soaked saffron, saffron food colour. Add soaked rice and allow to cook till water absorbs properly. Switch off the flame. Keep aside.

Heat 2 tbsp ghee in a heavy bottomed wok. Add bay leaf, cloves, almonds, cashews, coconut slices, raisins for few seconds. Add sugar and boiled rice, mix nicely. Cover and allow to cook on low flame for 4-5 minutes. Uncover stir gently, add nutmeg powder, cardamom powder and stir. Cover and keep aside for 10 minutes and enjoy tasty meethe chawal.
