1 cup basmati rice (soaked for 20 minutes) ½ cup blanched fresh green peas (blanch for 5 minutes with salt and sugar) 1 chopped onion 2 chopped tomatoes 1tbsp cashews 1 inch ginger 5 garlic cloves 1-2 bay leaf 1 inch cinnamon stick 1 tsp salt 1 green chili ½ tsp black pepper powder 2 tbsp ghee 1 tsp cumin seeds Fresh Coriander
Heat 2 tbsp ghee in a wok, crackle cumin seeds. Add bay leaves, cinnamon stick. Cashews and green chili, cook for a minute. Add blanched green peas, mix nicely. Add salt and black pepper powder. Mix. Add 2 cups of water, cover and allow to boil. Add soaked rice, gently mix and cover. Cook on low flame till all water absorb properly. Switch off the flame. Open and give a gentle stir. Add fresh coriander, mix and cover for 10 minutes. After 10 minutes serve hot.
