For Sugar syrup – 400gram sugar 200ml water 1/4 tsp lemon Juice ½ tsp cardamom powder Few saffron strands A pinch of red orange food colour For Batter - 1 cup sooji ¼ cup maida ½ cup curd A pinch of red orange food colour ¼ tsp baking soda / ½ tsp baking powder
For sugar syrup : Add sugar & water and allow to melt. Add red orange food colour, soaked saffron, lemon juice, cook for 2-3 minutes. Switch off the flame, add cardamom powder. Keep aside.
For Batter : Add sugar and maida in a mixer jar and grind. Transfer sooji maida mixture in a bowl, add curd, red-orange food colour. Prepare a thick batter using water. Cover and keep aside for 10 minutes. After 10 minutes uncover, add baking soda, mix nicely. Transfer this batter into a piping bag. Heat oil or ghee in a flat bottom pan. (Fill the pan only ½ inch deep) Pipe out the jalebis into the pan. (While piping out the flame should be low) Fry them on medium flame. Take them out from oil/ghee and dip in sugar syrup for 20 second. Tips: To maintain the crispiness 1. The sugar syrup should be Luke warm. 2. Jalebi should be luke warm too (not hot) Enjoy crispy home-made Jalebi.
