Cauliflower pokoda or Gobhi polada is an ideal evening snack for all age groups or perhaps as a munching snack served to surprise guests. Crispy fritters or pokada are very easy to make and they are eaten by all. Pokoda or pokodi is the recipe when you are in mood of eating something very tasty and unique. 500gram cauliflower florets 1.5 cup besan (gram flour) 1 finely chopped onion 3-4 chopped green chilis 2tbsp grated ginger 1 tsp red chili powder ½ tsp carom seeds 1 tsp salt 1 cup fresh coriander ¼ tsp baking soda ½ tsp turmeric powder
Add salt and turmeric in boiled water. Add florets and soak for 10 minutes. After 10 minutes take out the florets from hot water. Keep them on a muslin cloth. For batter, add besan, carom seeds, chili powder, salt, grated ginger, chopped coriander, chopped onion, chopped green chilis in a bowl, mix all. Gradually add water and prepare a thick batter. Keep aside for 10 minutes. Add baking soda and mix. Add cauliflower florets in batter and coat all the florets with besan batter. Heat oil on high flame, fry besan coated cauliflower in hot oil till they become crispy. Take them out from oil, gently press them with a heavy object. Again, fry the pressed gobhi pakoda in hot oil for few seconds. Take out from oil and serve hot with green chutney.
