Winters is a time to explore variety of recipes. We generally tend to eat food which is rich in taste and gives us good amount of warmth to fight the chilly weather and also to enhance our immunity. Food Connection is presenting the variety of recipes in one video where we can taste good and healthy food. Prepare this winter special thali and enjoy the winter season. Thali contains delicious sweet dish Gajar ka halwa, Malai Matar, Gobhi aloo ki garam garam sabji, seasonal bathua ka raita, steamy pulao, methi ki bhawan poori, green chutney and never to say no to methi ke gota.

Gajar ka halwa -
500gram grated red carrots
½ cup milk
½ cup milk powder
¼ cup / 50gram sugar
Chopped nuts
Cardamom powder
3 tbsp ghee
Malai Matar -
1+1/2 cups blanched fresh green peas (boil for 5 minutes in water with 1tsp alt and 1tsp sugar)
1 roughly chopped onion
2 roughly chopped tomatoes
4 garlic cloves
1 inch ginger
1-2 green chilis
1 bay leaf
1 cinnamon stick
1 tbsp cashews
1 tsp red chili powder
¼ tsp turmeric powder
1tsp coriander powder
1 tsp salt
1 tsp sugar
Fresh coriander
¼ cup fresh malai / cream
2 tbsp oil
Aloo Gobhi -
1 chopped potato
500gram cauliflower florets
1 tbsp grated ginger
2 chopped green chilis
1 chopped tomato
1tsp red chili powder
¼ tsp turmeric powder
1tsp coriander powder
½ tsp garam masala
1tsp cumin seeds
2tbsp oil
1 tsp salt
Fresh coriander
Matar Pulao -
1 cup basmati rice (soaked for 20 minutes)
½ cup blanched fresh green peas (blanch for 5 minutes with salt and sugar)
1 chopped onion
2 chopped tomatoes
1tbsp cashews
1 inch ginger
5 garlic cloves
1-2 bay leaf
1 inch cinnamon stick
1 tsp salt
1 green chili
½ tsp black pepper powder
2 tbsp ghee
1 tsp cumin seeds
Fresh Coriander
Bathua Raita -
1.5 cup fresh beaten curd
1 cup boiled bathua (boil for 5 minutes on high flame)
½ tsp oil
½ tsp cumin seeds
½ tsp roasted cumin seeds powder
½ tsp salt
¼ tsp black salt
Methi Gota -
150gram besan / gram flour
1 cup finely chopped fresh green methi
1 tsp red chili powder
1 tsp salt
½ tsp baking soda
½ tsp carom seeds
1 tbsp lemon juice
1 chopped green chili
1 tbsp oil
Green Chutney -
1 bunch of clean fresh coriander
4-5 green chilis
1 inch chopped ginger
1 tbsp bhujia
½ tsp salt
¼ tsp black salt
1 lemon juice
Methi Masala Puri -
1.5 cup whole wheat flour
¼ cup besan
1 cup fresh and chopped methi
1 tsp red chili powder
1 tsp carom seeds
1 ts[ salt
½ tsp garam masala
1tsp oil
Gajar Ka Halwa -

Add grated carrots and ½ cup milk in a pressure cooker and take 2-3 whistles on medium flame.

Let the stream vent out automatically and cooker comes to normal temperature. Open the pressure cooker and dry the moisture on high flame.

Add milk powder and ghee, cook for 2-3 minutes, stir continuously. Add sugar and cook till sugar melts properly and all the water gets evaporated, switch off the flame. Add ghee, dry fruits and cardamom powder. Instant gajar halwa is ready serve hot.

Malai Matar -

For gravy add onion, tomatoes, green chili, ginger, garlic, cinnamon stick, bay leaf, cashes in a pan.

add ½ cup water. Allow to cook on low flame till all the ingredients get soft. Switch off the flame. Allow to cool. Take out cinnamon stick and bay leaf. Add cooked ingredients in a mixer jar, add water if needed, grind in a smooth paste.

Mix red chili powder, turmeric powder, coriander powder in a bowl, add 2 tbsp water and mix nicely.

Heat 2 tbsp oil in a pan, crackle cumin seeds, add soaked masala and cook for 1 minute. Add ground paste and cook for 3-4 minutes on low flame, add water to adjust the consistency. Cover and cook.

Uncover and add malai and salt, sugar mix nicely. Add blanched green peas, cook for 3-4 minutes.

Switch off the flame, garnish with fresh coriander and serve hot with roti, chapati and paratha.

Aloo Gobhi -

Heat oil in a pan, crackle cumin seeds. Add chopped potato, cauliflower florets, salt and turmeric powder. Mix and cover allow to cook for 5 minutes.

Uncover and add grated ginger, green chilis, red chili powder, coriander powder, tomato in pan. Mix and cover. Allow to cook till all vegetables get cooked properly, it will take approximately 7-8 minutes. Add grama masala and fresh coriander and serve hot.

Matar Pulao -

Heat 2 tbsp ghee in a wok, crackle cumin seeds.

Add bay leaves, cinnamon stick. Cashews and green chili, cook for a minute. Add blanched green peas, mix nicely. Add salt and black pepper powder. Mix. Add 2 cups of water, cover and allow to boil.

Add soaked rice, gently mix and cover. Cook on low flame till all water absorb properly. Switch off the flame.

Open and give a gentle stir. Add fresh coriander, mix and cover for 10 minutes. After 10 minutes serve hot.

Bathua Raita -

Crush boiled bathua in a mortar. Take fresh beaten curd in a bowl. Add crushed bathua, cumin seeds powder, salt, black salt and mix nicely.

For tadka heat oil, crackle cumin seeds, add hing, switch off the flame. Add tadka in raita, mix and tasty and healthy bathua raita is ready.

Methi Gota -

Add salt, carom seeds, red chili powder, chopped chili, chopped methi, oil in gram flour and mix nicely. Gradually add water and prepare a thick batter. Keep aside for 5 minutes.

Add lemon juice and baking soda and mix nicely.

Heat oil on high flame. Fry pakoda in medium high flame till golden brown and take out from oil.

Fry green chilis and serve hot.

Green Chutney -

Add all ingredients in a mixer jar. Add 2 tbsp of water and grind in a smooth paste.

Fresh green chutney is ready.

Methi Masala Puri -

Add 1.5 cup whole wheat flour, besan, salt, red chili powder, garam masala in a bowl.

Mix and prepare a dough using water, add oil and make the dough smooth. Cover and keep aside for 10 minutes. After 10 minutes prepare small balls from the dough with greased hands.

Roll the balls with rolling pin. Fry in hot oil.

Crispy, spicy methi puri is ready.
