1.5 whole wheat macaroni 2 tbsp extra light olive oil 1 tbsp chopped garlic 1 finely chopped onion 1 tbsp ginger chili paste 1 chopped capsicum 1 chopped tomato 1tsp salt 2 tbsp instant gravy premix ¼ cup tomato ketchup ¼ cup mayonnaise 1tsp oregano 1tsp red chili flakes 1tbsp chopped black olives 1 .5 cup mozzarella cheese
Boil 2 litre water. Add salt and 1.5 cup whole wheat flour macaroni for 5-6 minutes on high flame. Sieve immediately boiled macaroni and wash with room temperature water. Keep aside. Preserve the water. Heat 2 tbsp extra light olive oil in a pan. Add chopped garlic and onion and cook for a minute. Add chili ginger paste. Cook for a minute. Add chopped capsicum and tomato, 1 tsp salt, 2 tbsp instant Indian gravy premix and mix. Add preserved boiled macaroni water to adjust the consistency. Cover and allow to cook till tomato get soft. Uncover and add tomato ketchup, mayonnaise, 1tsp oregano, 1tsp red chili flakes, black olives and mix nicely. Add boiled macaroni and ½ cup mozzarella cheese. Mix and cook for a minute. Grease a 7 inch glass square dish with extra virgin olive oil, spread all the prepared macaroni. Press and spread mozzarella cheese, garnish with chopped tomatoes, capsicum, black olives and basil leaves. Bake in a preheated oven for 20 minutes on 200 degree. Take out from oven and serve hot!!
