Broccoli soup is very healthy soup, it is good for weightloss too. You can prepare it at home with simple ingredients. This low-fat version of cream of broccoli soup can be the most go to soup which has a creamy consistency without any extra cream. This simple soup is so easy to prepare and in less than half an hour.

2 cups broccoli florets
1 sliced onion
1 chopped onion
2 garlic cloves
1/4 cup fresh cream
1tbsp butter
1tbsp extra virgin olive oil
1tsp salt
1/2tsp black pepper powder
Heat 1tbsp butter, 1tbsp extra virgin olive oil in a pan. Add 2 chopped garlic cloves, 1 sliced onion in pan and sauté on low flame for a minute.

Add 2tbsp flour and roast on low flame. Add 1 small chopped potato, 2 cups broccoli florets. Stir well.

Add 500ml water, 1tsp salt, 1/2 tsp black pepper powder. Cover and cook till all the vegetables are cooked properly. Switch off the flame.

Blend the mixture in a smooth puree. Add 1/4 cup fresh cream and mix. Boil for a minute. Cream of broccoli soup is ready. Switch off the flame.

Serve creamy, hot broccoli soup is ready. Enjoy hot and creamy broccoli soup.
