200gram maida 1/4 cup sooji 1/4 cup oil 1tsp salt 1tsp ajwayan (carom seeds) 1 tbsp kasoori methi A pinch of baking soda
Mix maida, salt, ajwayan, soda, kassori methi, sooji in maida. Add oil and mix nicely. Prepare a tight dough using water. Cover and keep aside for 10 minutes. After 10 minutes, uncover the dough and take a small piece of dough and gently press, flatten with a finger and thumb. Prepare all the mathris in the same way. Allow to heat oil on low flame for 10 minutes, add all mathis in oil, do not touch immediately, fry on low flame till they become light pink colour, flip and fry from all sides on low flame. Take out from oil, allow to cool completely. Store in an airtight container. Enjoy with tea.
