Prepare Mexican food quesadilla in a very healthy way using oats, vegetables and olive oil.

1/2 cup oats
1/2 cup whole wheat flour
1/2tsp salt
1tbsp extra virgin oilve oil
For stuffing -
1/4 cup yellow bell pepper
1/4 cup green bell pepper
1/4 cup red bell pepper
2tbsp boiled sweet corn
2tbsp boiled and mashed sweet corn
1 cup boiled rajma
1/2 tsp red chilli powder
1/2tsp black pepper powder
oregano
red chilli flakes
fresh coriander

Add 1/2 cup oats in a mixer jar and grind to make a fine powder.

For dough mix 1/2 cup oats flour, 1/2 cup whole wheat flour, 1/2 tsp salt, 1tsp extra virgin olive oil in a bowl. Prepare dough using water. Cover and keep aside.

For stuffing, heat extra virgin olive oil in a pan. Add chopped garlic, chopped onion in a pan and sauté on low flame. Add chopped yellow bell pepper, green bell pepper, red bell pepper, boiled sweet corn, boiled and mashed sweet corn, boiled rajma, 1/2 tsp red chilli powder, 1/2tsp black pepper powder, oregano, red chilli flakes, fresh coriander in a pan and mix nicely, cook for 2-3 minutes on low flame. Add salt, mix and switch off the flame.

Uncover the dough and prepare lemon size balls. Roll the balls in a thin disc. Roast for few seconds on tawa on low flame. Keep all the rotis/tortilla covered. Place prepared stuffing on half side of tortilla. Place grated cheese or cheese slice, fold and cover the stuffing.

Heat a grilled sandwich maker or a tawa. Grease with extra olive oil. Place prepared tortilla, cover and grill till grilled marks appears. Healthy oats quesadillas are ready, cut in halves and serve hot.
