Ingredients-For immunity booster drink - 300ml water 4-5 fresh basil leaves 1 inch grated ginger 1/2tsp black pepper powder 1/4 tsp cinnamon powder 4 crushed cloves 2 crushed cardamom 1/4 cup jaggery For sponge cake- 1 cup ragi flour / finger millet flour 2tbsp cocoa powder 2tbsp almonds flour 1tbsp flax seeds powder 1/4 tsp baking soda 3/4 tsp baking powder 1/4 cup honey 1/4 cup olive oil 1/2 cup curd 1tsp vanilla essence 1tsp lemon juice
Add 300ml water in a vessel. Add 4-5 fresh basil leaves, 1 inch grated ginger, 1/2tsp black pepper powder, 1/4 tsp cinnamon powder, 4 crushed cloves, 2 crushed cardamom, 1/4 cup jaggery in water, allow to cook and reduce the water to its half. Switch off the flame. Allow to cool and sieve. Keep aside. For sponge, mix 1 cup ragi / finger millet flour, 2tbsp cocoa powder, 2tbsp almond flour, 1tbsp flax seeds powder, 1/4tsp baking soda, 3/4tsp baking powder, 1/4 tsp rock salt in a bowl. For wet ingredients, mix 1/4 cup honey, 1/2 cup fresh curd, 1/4 cup olive oil in a bowl. Mix vanilla essence. Mix dry and wet ingredients, add 1tsp fresh lemon juice and gradually add prepared kadha and mix gently. Add cake batter in 5 inch greased cake tin. Tap for 2-3 times. Bake the cake in a preheated kadai for 35-40 minutes. Open the lid and check the cake with a toothpick. Take out the cake from kadai. Allow to cool the cake for 30 minutes. Demould the cake and allow to cool. Healthy, gluten free, immunity booster cake is ready.
