Chole kulche is one of the most popular street food. These kulchas are prepared with maida and in oven. Today we are preparing kulchas with organic whole wheat flour on tava. You can prepare these soft and spongy kulchas on tawa or oven using both method. For serving we will prepare tempting pindi chhole and lip smacking instant chilli pickle.

For Chhole -
1 cup of 8 hours soaked chickpea
1 cup of onion + green chilli paste
1 cup of tomato paste
1 tsp ginger-garlic paste
1 tsp red chiili powder
1 tsp coriander powder
1/4 tsp turmeric powder
1 tsp salt
1 tsp cumin seeds
2 tbsp oil
1 tsp garam masala
1 tbsp tea leaves (chai patti)
1 bay leaf
1 cinnamon stick
4-5 cloves
7-8 black pepper corns
Kasoori methi
For Kulcha –
For Kulcha
350 gram / 3 cups whole wheat flour (genhu aata)
1tsp salt
1tbsp powdered sugar
4tbsp sour curd
1 cup milk
2tbsp oil / ghee
Fresh coriander
For Pickle - Fresh green chillis
Onion slices
Tomato slices
cumin seeds
mustard seeds
oil
salt
coriander powder
turmeric powder
red chilli powder
For dough, take 350gram whole wheat flour, 1tsp salt, 1tbsp powdered sugar, 4tbsp sour curd, 1 cup milk. Mix all the ingredients gently.

Prepare a soft dough using water. Add 2tbsp ghee / oil and knead the dough and make it smooth.

Prepare a ball from the dough and grease with ghee. Cover and keep aside for 2 hours.

After 2 hours, uncover the dough and knead for a minute. Prepare balls from the dough.

Dust the ball and gently roll with a rolling pin, place fresh coriander leaves and gently press.

Roast on medium flame from both sides. You can bake in oven too. Bake in a preheated

oven for 10 minutes on 200 degree Celsius. Prepare all kulchas in the same way.

For instant khatti mirchi pickle, soak green chillis and sliced onion in vinegar for 3-4 hours.

Heat 1 tbsp oil on tava. Crackle cumin seeds and mustard seeds in oil. Add green chillis, sliced onion, turmeric powder, coriander powder, red chilli powder on hot tawa. Cook for a minute.

Add tomato slices if you wish. Collect the instant pickle from tawa.

Clean the tawa, add ghee / oil on tawa. Roast kulcha from both sides. Serve hot kulchas with spicy chhole & pickle.
