Springs rolls are very popular deep fried Indo-Chinese food among all of us. Today we are presenting a perfect, crispy and mouth watering spring rolls, which are prepared with whole wheat flour. For sheets - 1 cup whole wheat flour (genhu aata) 2tbsp corn flour 1tsp salt For stuffing - 2 cup boiled noodles 1/2 cup finely chopped onion 1/2 cup finely chopped carrots 1/2 cup finely chopped capsicum 1tsp black pepper powder 1tsp salt 1tsp soya sauce 1tsp vinegar 1tsp red chilli sauce 2 tbsp tomato sauce For dip - 1tsp oil 1tbsp schezwan sauce 1tsp chopped garlic, fresh coriander, 1 tbsp schezwan chutney, 1tbsp tomato sauce
For stuffing - Heat 1 tbsp oil. Add onion and cook for a minute on high flame. Add finely chopped carrots, capsicum and cook on high flame. Add boiled noodles, salt, 1tsp black pepper powder, 1tsp vinegar, 1tsp red chilli sauce, 1tsp soya sauce, 2tbsp tomato sauce in wok and mix nicely. Switch off the flame, allow to cool. For sheets - Mix 1 cup whole wheat flour, 2tbsp corn flour, 1tsp salt in a bowl. Gradually add water and prepare a thin, lump free batter. Heat a flat-bottomed pan on low flame. Pour a big spoonful batter and spread it. Allow to cook on medium flame. Remove from pan and keep on a dusted plate, sprinkle dry flour on each sheet. Prepare and collect all the sheets in the same way. Sheets are done. Prepare a thick slurry, mixing 2tbsp wheat flour and water. Place a sheet on board, put noodles stuffing on corner of sheet, fold and seal with prepared slurry as shown in the video. Fry in hot oil on medium flame. Take out from oil. For dip heat 1 tsp oil in a tadka pan. Add chopped garlic and fresh coriander, 1 tbsp schezwan chutney, 1tbsp tomato sauce, 1tsp soya sauce and 1/4 cup water. Allow to boil. Serve hot spring rolls with hot and spicy dip.
