Khandvi is a very popular Gujarati snack recipe. Traditionally it takes a lot of time in preparation. 1 cup besan (gram flour) 3/4 cup curd 1+1/4 cup water 1tsp salt 1/2 tsp turmeric powder For tadka - 1tbsp oil 1tsp mustard seeds 1 green chilli Curry leaves Hing Fresh coriander Fresh grated coconut
Take one bowl besan (gram flour), 3/4 bowl sour curd, 1+1/4 bowl water for perfect khandvi. Mix besan, salt and turmeric powder,3/4 cup curd in a vessel. Gradually add 1+1/4 bowl water and prepare a lump free thin batter. Fill 3-4 inch water in a pressure cooker, place a ring. Place the batter filled vessel in pressure cooker. Close the lid and wait for 4 whistles on medium flame. Open the lid and take out the vessel from pressure cooker. Immediately mix it with a whisker and make it smooth. Spread on a plate or on a clean kitchen platform when the mixture is hot. Spread in a thin layer. After 5 minutes, cut in long strips of 2-3 inch thickness. Now roll the strips as shown in the video. For tadka, heat 1tbsp oil, crackle mustard seeds, add curry leaves, green chillis, hing. Cook for few seconds and switch off the flame. Add prepared tadka over khandvis, garnish with fresh coriander and grated coconut. Tasty Khandvis are ready to serve.
