Vada pav paratha is very tasty,unique and innovative paratha. To add to it the very flavoured and spicy vada pav chutney will give you the perfect and authentic taste of real vada pav. This paratha is very easy to make and definitely you will love it. It will be just like eating street food wala vada pav in the form of paratha at home.

For dough - 1 cup whole wheat flour (genhu aata) 1 cup maida 1tsp salt 1tbsp oil For stuffing - 500gram boiled and mashed potatoes 1tbsp oil 1tsp mustard seeds 1/2 tsp turmeric powder 1/4 tsp red chilli powder 1tsp salt 7-8 garlic cloves 2-3 green chillis Curry leaves For dry chutney 8-10 garlic cloves 1/4 cup dry coconuts / peanuts 3-4 red kashmiri red chillis 1/2 tsp salt
For dough, mix 1 cup whole wheat flour, 1 cup maida, 1 tsp salt in a bowl. Prepare a soft dough using water. Sprinkle some water on dough, cover and keep aside for 10 minutes. Crush 7-8 garlic cloves and 3-4 green chillies in a mortar. Heat oil in a pan, crackle mustard seeds. Add curry leaves, crushed chilli - garlic paste. For stuffing - Add 1/2 tsp turmeric powder, 1/4 tsp red chiili powder, 1tsp salt and mix. Add boiled and mashed potatoes and mix nicely. Add fresh coriander, mix and switch off the flame. Allow to cool. For chutney, dry roast garlic cloves on low flame. Add dry coconut and roast. Switch off the flame, add kashmiri red chillis and roast for seconds. Allow to cool. Add all ingredients in mixer jar, add salt and prepare a coarse powder. Sookha vada pav chutney is ready. Now uncover the dough, add oil. Prepare a soft and smooth dough. Make a big size ball from the dough. Dust the ball with dry flour, roll in a thick small disc. Place stuffing in the center, sprinkle sukha vada pav chutney, cover and seal it nicely. Dust with dry flour, gently roll in a thick disc with rolling pin. Place on medium hot tawa, roast from both sides, apply oil and roast till brown marks appear. Prepare all the vada pav paratha in the same way. Shallow fry green chiilis on tawa, take out and sprinkle salt. Now serve hot vada pav paratha with sukha vada pav chutney and shallow fried green chillis.
