Hello friends, today we are presenting a most beautiful and easy pineapple cake recipe. This cake recipe is from scratch and perfect for beginners and pure vegetarians. Yes this cake is prepared without egg, butter, oven and the best part is that it is decorated with homemade gel, which is the most USP (Unique Selling Point) of this cake. For cake sponge- 1 cup = 250ml, Cake tin size - 5 inch
1 cup maida
1/4 cup oil
1/2 cup powdered sugar
1/4 cup fresh curd
1 tsp baking powder
1/2 tsp baking powder
1 tsp pineapple essence
1 tsp vinegar
A pinch of yellow food colour
For pineapple glaze -
1 cup water/ pineapple juice
1/2 cup sugar
1/2 tsp pineapple essence
1/2 tsp lemon juice
2tbsp corn flour
For decoration –
Whipping cream

sugar sprinkles
Mix 1/4 cup oil, 1/2 cup powdered sugar in a bowl and mix nicely. Add 1/4 cup fresh curd and mix. Add a pinch of yellow food colour. Add 1tsp pineapple essence.

Sieve 1cup maida, 1tsp baking powder, 1/2tsp baking soda in oil-sugar-curd mixture. Mix gently.

Gradually add milk, 1tsp vinegar and prepare a thick cake batter.

Grease a 5 inch cake tin and place a parchment paper, dust with dry flour. Fill the cake mould with prepared cake batter. Flatten it and tap for 2 -3 times.

Preheat a kadai for 10 minutes on low flame. Place a ring. Place cake tin in kadai and bake for 30-35 minutes on low flame or bake in preheated oven for 30 minutes on 180 degree.

Uncover the kadai and check the cake with toothpick. Take out from kadai. Cover with a clean kitchen napkin and allow to cool for 30 minutes. After 30 minutes, demould the cake and allow to cool completely.

For pineapple glaze, add 1 cup water, 1/2 cup sugar, 2 tbsp corn flour, 1/8 tsp yellow food colour, 1/2 tsp lemon juice in a pan and mix nicely. Switch on the flame and cook on low flame till mixture becomes thick and glossy. Mix 1/2 tsp pineapple essence and mix. Switch off the flame. Allow to cool.

Whip non-dairy cream till stiff peaks. Chop canned pineapple in small pieces. You can use fresh pineapple too. Cook fresh pineapple pieces with sugar. The leftover juice will used as soaking syrup.

Place 1spoon of whipped cream on cake board. Keep cake and slice the cake with a knife. Soak cake slice with pineapple soaking syrup. Place whipped cream and spread on cake slice, place chopped pineapple pieces, and cover them with whipped cream. Place second slice of cake and soak with pineapple soaking syrup and cover the whole cake with whipped cream as shown in the video.

Make design with a comb as shown in the video. Place a star nozzle in a piping bag, fill with whipped cream. Decorate the cake sides as shown in the video or as desired. Decorate cake bottom also as shown in the video.

Fill prepared pineapple cake gel in piping bag, cut a small tip and spread on cake's centre top, flatten it. Drop the gel from the sides for dripping effect.

Decorate with colourful sugar sprinkles. Homemade eggless pineapple cake is ready. Enjoy.
