There are lot of biscuits available in the market very easily. But, you can not compare the homemade biscuits with market bought biscuits. So, today we are presenting a very easy and tasty sooji biscuit recipe, which you can prepare without oven and easily available ingredients in our kitchen pantry. For sugar syrup - 1 cup sugar 3/4 cup water 1/2 tsp cardamom powder 1/4 tsp lemon juice For biscuit dough - 1 +1/4 cup Maida 1/2 cup sooji / rava / semolina 1/4 cup powdered sugar 60gram ghee 60 ml unflavoured oil 3/4 tsp baking soda 1/2 tsp cardamom powder 2 tbsp milk if needed Pistachio powder
For sugar syrup - add 1 cup sugar and 3/4 cup of water in a vessel and allow to melt sugar on high flame. Cook on low flame and make it little thick. Add cardamom powder. Add 4-5 drops of lemon juice in sugar syrup and switch off the flame. Keep aside. Place a pressure cooker on low flame for preheating. And preheat the oven for 10 minutes on 180 degree Celsius. For biscuit dough, add 1/4 cup powdered sugar, 60ml ghee, 60ml oil in a bowl. Mix nicely. Add 1/2 cup fine sooji, 1+1/4 cup maida, 3/4 tsp baking soda, 1/2 tsp cardamom powder. Mix nicely. Mix the mixture with hands and try to gather all the ingredients. If needed add 1-2 tbsp of milk and mix. Take a lemon size portion from the biscuit dough and prepare a biscuit in oval shape as shown in the video. For pressure cooker baking prepare a plate, grease a white plain paper with ghee or oil and wipe out extra ghee. Our homemade butter paper is ready. Place prepared biscuits on butter paper plate. Place prepared biscuits on butter paper plate. Soak saffron in milk. Brush prepared biscuits with saffron milk. For texture make light cuts with a knife as shown in the video. Place prepared plate in preheated pressure cooker. Cook for 20-25 minutes on low flame. Bake in preheated oven for 25 minutes on 180 degrees. Take out baked biscuits from oven. Take out plate from pressure cooker too. Keep all hot biscuits on a tray, and soak them with luke warm sugar syrup. Garnish with pistachio powder. Crispy from outside and moist from inside, biscuits are ready.
