Crispy, layered khari biscuits are perfectly paired with hot tea. Generally these are prepared with maida , butter and vanaspathi. Today we are coming with whole wheat flour ghee khari biscuit recipe, which can be prepared in oven or without oven. The khari came out crispy, layered and delicious. - For dough 1.5 cup whole wheat flour (genhu aatta) 1 tbsp ghee 1 tsp salt 1/2 tsp ajwayan (carom seeds) For paste 3 tbsp ghee 2 tbsp corn flour
Method - Mix 1.5 cup whole wheat flour, 1 tbsp ghee salt, carom seeds in bowl. Gradually add water and prepare a dough. Add 1/2 tsp lemon juice to make the dough flexible. Knead the dough for 3-4 minutes. Cover and keep aside for 10 minutes. Mix 2 tbsp corn flour and 3tbsp ghee in a bowl. Uncover the dough, knead for a minute and divide the dough in 6 equal parts. Prepare balls. Roll the balls in thin discs, keep them covered. Apply corn flour-ghee mixture on disc, place. Put all the discs in the same way, apply corn flour-ghee slurry on each disc. Now fold the sheets in book fold as shown in the video. Apply corn flour-ghee paste and fold as shown in the video and prepare a rectangular shape. Cover and keep in fridge for 30 minutes. Take out the folded sheets from fridge, gently roll them in a big rectangular piece. Cut the sides of sheets, now cut in small pieces or as your choice with a sharp knife. Place a butter paper or parchment paper on plate for pressure cooker baking. Assemble the pieces on plate. In the same way prepare a tray for oven baking. Preheat the pressure cooker for 10 minutes on low flame, place a ring and put the plate and bake on low flame for 20 minutes. Also bake in a preheated oven for 20 minutes on 200 degrees. Now bake the aata khari biscuits on 180 degrees for 10 minutes more. Flip the aata khari biscuits and bake for another 10 minutes on low flame. Be careful these biscuits are hot. Take out the aata biscuits khari from the oven, transfer on a wire rack and allow to cool. Take out pressure cooker aata khari biscuit and allow to cool. Crispy, flaky, aata khari biscuits are ready. Store in an airtight container.
