Best out of waste, yes today we are making a tasty, delicious, flavorful, refreshing sweet recipe with leftover watermelon rind. These paan petha are very easy to make and can be prepare with simple ingredients which are always available at home.

Leftover watermelon rind
1/2 cup sugar
green food colour
For stuffing
1/2 cup milk powder
1/4 cup milk
2 tbsp rose jam (gulkand)
Remove red and soft part of watermelon rind. Also remove the back side of green part. Cut these in triangles.

Boil the watermelon rind for 7-8 minutes on high flame. Switch off the flame. Take out boiled watermelon rind from the water.

Add 1/2 cup sugar in one cup water, add green food colour. Boil till sugar melts properly.

Add boiled watermelon rind in sugar syrup and boil on medium flame for 7-8 minutes or till they get transparent.

Switch off the flame, take out the sweet watermelon rind from sugar syrup.

For stuffing add 1/2 cup of milk powder, 1/4 cup of milk in a sauce pan. Mix and switch on the flame. Cook for 2 minutes on low flame.

Add 2 tbsp rose jam (gulkand) in pan and cook till all the mixture comes together.

Switch off the flame and allow to cool.

Keep a boiled and sweet watermelon rind on a board. Place prepared stuffing in the center and fold like a paan (betel), secure the ends with a clove, decorate with edible silver foil and cherry.

Serve chilled.
