gud aata papdi is very tasty and crispy. These are perfect dry snack which you can store for a month. This crunchy sweet papdi made with healthy whole wheat flour and goodness of jaggery.

2 cups of whole wheat flour (genhu ka aata)
3/4 cup of jaggery (gud)
1 tbsp sesame (til)
3 tbsp oil
Add 3/4 cup jaggery and 1/2 cup of water in a pan, cook and allow to cook till jaggery melts properly. Switch off the flame. Allow to cool the jaggery water and sieve.

Add 2 cups of wheat flour, 1 tbsp sesame seeds, 3 tbsp oil in a vessel. Mix nicely. Add jaggery water in flour and knead a tight dough. Cover and keep aside for 5 minutes.

After 5 minutes, prepare small balls from the dough. Roll the balls in small and thin discs. Prick with fork. Prepare all the gud aata papdi and keep them open for 30 minutes.

Fry gud aata papdi in medium hot oil on low flame. Take out the gud atta papdi from oil, allow to cool. Crispy and tasty gud aata papdi is ready. Store in an airtight container for a month.

Very nice recipe for a traditional dish. Is it necessary to roll? What would be the outcome if we press the balls with hand and then fry?
