Idli is a famous South Indian food. We all love to eat idli in breakfast, lunch and dinner. This new flavored idli is very tasty, soft, and easy to make. This is a traditional kanchipuram idli recipe.

2 cups of fermented Idli batter
1/2 cup fresh curd (dahi)
1 inch grated ginger (adrak)
2 finely chopped green chillis (hari mirch)
Few chopped curry leaves (curry patta)
1/2 tsp mustard seeds (rai)
1/2 tsp cumin seeds (jeera)
1 tbsp chana dal
1 tbsp desi ghee
1/2 tsp turmeric powder (haldi)
1 tsp salt
Fresh coriander
½ cup broken cashews
Heat 1tbsp ghee in a pan. Crackle mustard seeds, cumin seeds in ghee. Add chana dal and roast for a minute.

Add grated ginger, chopped green chillis, curry leaves, broken cashews, in ghee. Roast for a minute. Switch off the flame and add turmeric powder. Mix.

Add fresh curd, salt, fresh coriander and prepared tempering in fermented idli batter. Mix nicely.

Place half cashew in greased idli plates. Pour the prepared idli batter in greased idli plates.

Steam the idlis in a steamer for 15 minutes on high flame.

After 15 minutes, take out the idli plates from steamer. Allow to cool for 5 minutes. Demould the idlis with a spoon. Tasty and soft idlis are ready.
