Kadhi kachori is a street food. Here i am presenting traditional recipe of urad dal kachori, served with tangy kadhi which is specially prepared for kachori. It can be eaten as any time breakfast or evening snacks. Uploaded by admin on 26-Feb-2020.
For kadi - 2 tbsp gram flour (besan) 1 tbsp dry mango powder (aamchur) 1 tsp salt 1 tsp red chilli powder 1/4 tsp mustard seeds (rai) 1 tsp oil For dough - 250gram maida, 60ml oil, 1 tsp salt For stuffing - 1/2 cup urad dal soaked for 3 hours 2 tsp red chilli powder, 1 salt salt, 1 tsp dry mango powder, 1 tsp garam masala, hing,2 tbsp gram flour, 1 tsp mustard seeds, 1 tsp fennel seeds, 1 tsp cumin seeds, 1 tbsp oil Imli chutney for serving.
For kadi, add gram flour, red chilli powder, dry mango powder, turmeric, salt in a bowl. Mix and prepare a thin batter using water. Heat oil in a wok, crackle mustard seeds and add prepared gram flour mixture in oil. Continuously mix and cook on low flame for 15-20 minutes. Kadi is prepared, switch off the flame. keep aside. For kachori stuffing, wash and soak urad dal for 3-4 hours, sieve and take out all the water. Transfer the soaked dal in a mixer grinder and grind to make it coarse. Heat oil in a pan. Crackle mustard seeds, cumin seeds, fennel seeds in oil. Add hing and gram flour, roast for 2 minutes. Add grounded urad dal, salt, red chilli powder, turmeric powder, garam masala in pan and cook for 6-7 minutes till the mixture becomes crumbly and dry. Switch off the flame. Allow to cool. For kachori dough, add maida, salt, oil in a vessel. Mix and prepare a soft and sticky dough using water. Throw the dough from height to smoothen the dough as shown in the video. (Please see the video for details) Dough is ready, cover and keep aside for 10 minutes. Stuffing and dough is ready. Prepare small ball from the dough. flatten it and place 1 tbsp stuffing in the center of disc. Cover and seal the ends properly. Gently press and prepare the kachori. Heat oil on low flame, the temperature of the oil should be low. Add prepared kachoris in oil and fry on low flame, do not touch them immediately. After some time kachori will float on oil. Splash oil on kachoris with a small spoon so that they can fry from upper side too. Now flip and fry them other side too. Kachoris are puffed nicely. Now set flame on medium and allow to fry till they become brown in colour. Keep patience, they will turn out very crispy and perfect. Take them out from oil. Crispy kachori, kadi is ready for serve. Enjoy kachori with kadi and imli chutney.
