Add khoya / mawa in a pan. Roast on low flame for 2-3 minutes. Add desiccated coconut, mix and roast for 2 minutes on low flame. Switch off the flame and keep aside. Add sugar and 100ml water in a pan. Melt sugar and prepare a thick sugar syrup. For the perfect sugar syrup consistency, place a drop of sugar syrup on a plate, rotate the plate, if the sugar syrup is not moving from its place, then sugar syrup is perfectly prepared. You can switch off the flame. Gradually add prepared sugar syrup in khoya - coconut mixture. And Mix properly. Divide the barfi mixture in two equal parts. Set one white part of barfi in a greased or lined mould. Add rose syrup in other part of barfi, mix nicely. Place the pink barfi mixture on white barfi mixture. Flatten it nicely. Sprinkle pistachio flakes and keep aside 1 hour or in fridge. After 1 hour demould the barfi, cut in squares. Tasty Rose coconut barfi is ready to serve.
