Fresh fruit egg-less cake is very delicious and easy to make. This homemade cake is prepared without egg, butter and oven. Here we are giving some easy tips and trick for making this cake at home where we can also prepare it without oven. This egg-less, fresh fruit is very spongy and flavorful. The decoration done is also very easy and it makes the cake look very tempting and people will be eager to eat it. Any one can bake and decorate this cake at home easily. This cake can be prepared easily by beginners. Try this at home and impress one and all.

For sponge - 1 cup = 250 ml
1 +1/2 cup of maida (bleached flour)
3/4 cup of powdered sugar
1/4 cup of oil
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla essence
For decoration -
Fresh fruits - Kiwi, strawberries, dragon fruit, pomegranate,
cherries, apple, mint leaves
Neutral gel, yellow food colour, corn syrup.
Add powdered sugar, oil in a bowl and mix nicely. Add 1/4 cup of milk and mix. Beat for 2-3 minutes.

Place a sieve on bowl, add maida, baking powder, baking soda sieve all in oil sugar mixture.

Add vanilla essence, milk and mix gently. Prepare cake batter which has consistency of dropping.

Add 1 tbsp vinegar and mix.

Here I have greased and lined a cake 6 inch tin with butter and butter paper.

Pour the cake batter in prepared cake tin. Flatten it and tap for 2-3 times.

Heat a pressure cooker or a kadai on low flame for 10 minutes. Place a ring in the center of the cooker. Keep the cake mould in the pressure cooker and allow to cook on low flame for 40-45 minutes. OR You can also bake in a preheated oven for 40-45 minutes on 180 degrees.

Wow !! the cake has come up nicely. Do not touch and open. Let it cook.

After 45 minutes, open the lid and check it with a toothpick. If tooth pick comes out clean the cake is perfectly cooked, if toothpick comes out with some cake batter or crumbs. Cook it for another 5-10 minutes on low flame. Switch off the flame and take out from the cake from pressure cooker. Allow to cool for 30 minutes.

After 30 minutes, demould the cake on a wire rack and allow to cool it completely.

For fresh fruit cake here I have used various fruits for stuffing and garnishing. Dragon fruit, kiwi, apple, strawberries, pomegranate and cherries.

Add chopped fresh fruits and sugar in a pan, cook on low flame till sugar dissolves properly. Add 1 tbsp of water. Switch off the flame.

Sieve the cooked fresh fruits and keep the fruit water and cooked fruits aside for later use.

For glaze add 1 tbsp water in 1 tbsp corn syrup. Microwave for 10 seconds. Mix and dip the chopped and sliced fruits in sugar glaze. Keep aside.

Add whipping cream in a bowl and whip with a electric beater till stiff peaks.

Place a cake board on a turntable. Apply whipped cream on the cake board. Place the cake and slice the cake in 3 slices with a serrated knife.

Soak the cake slice with the fruit water. Apply whipped cream and spread evenly. Sandwich the cooked fresh fruits, spread and again, cover the fresh fruits with the whipped cream. Repeat this process with all 3 slices. Apply the cream all over the cake and cover the cake nicely with whipped cream. Clean the sides and edges with the help of spatula.

Now the cake is ready for the final garnishing.

Add 1/2 tsp water in 1 tbsp neutral gel. Add yellow food

colour and mix. (You can also check my orange cake for homemade gel) Fill the gel in a piping bag. Make a small cut with the scissors.

Give the effect of dropping lines with the help of gel as shown in the video. Place glazed fresh fruits on the top of the cake. Place glazed fresh fruits on the top of the cake. Pipe out small stars randomly so that the fruits stick nicely with the cake. Finally garnish with fresh mint leaves. Homemade fresh fruit cake is ready.
