Kachori is very tasty and popular street food in india. We Indians can eat kachori any time. The perfect and authentic kachori recipe is very time consuming and need lot of practice. 1+1/2 cup Whole wheat flour (genhu ka aata) 1 /4 cup chana dal, soaked for 4-5 hours. 1 tbsp fresh coriander 1 tsp red chilli powder 1/2 tsp turmeric powder 1/8 tsp hing 1/2 tsp carom seeds (ajwayan) 1 green chilli 1/2 inch ginger
Wash and soak chana dal for 4-5 hours. Drain out all the excess water and transfer in the mixer jar. Add green chillies, ginger, salt, red chilli powder, turmeric powder and add 2 tbsp water and grind in a smooth paste. Add whole wheat flour, carom seeds, hing, fresh coriander and ground dal mixture in a vessel. Mix nicely. Gradually add water and prepare a hard dough. Add 1 tbsp oil in dough and make the dough smooth. Cover and keep aside for 10 minutes. After 10 minutes, uncover the dough and prepare small balls from the dough. Grease the board with oil and roll the ball in a small disc. Fry the rolled puri in hot oil on medium flame. Take out the fried puri. Fry all the dal puris in the same way.
