1 cup = 250 ml 1 cup whole wheat flour (genhu ka aata) 1/2 cup jaggery 1/4 cup oil 1 over ripe banana 1 tsp baking powder 1/2 tsp baking soda 1 cup milk or as needed
Today we will use over ripe banana as a egg replacer. Peel a banana and add in a mixer jar. Add 1/2 cup of jaggery powder, 1/2 cup of milk and grind in a smooth puree. Transfer the banana+ jaggery puree in a mixing bowl. Add 1/4 cup oil and mix. Add 1 cup of whole wheat flour, 1 tsp baking powder, 1/2 tsp baking soda and mix gently. Add milk and prepare a dropping consistency cake batter. Grease a 5 inch cake tin and line with parchment paper, dust with wheat flour. Pour prepared cake batter in the mould and spread evenly. Sprinkle pumpkin seeds, sunflower seeds and almond flakes on the top the cake batter. Tap for 2-3 times. Preheat the pressure cooker for 10 minutes on low flame. Place a ring or stand in the center of the pressure cooker. Keep cake mould in the pressure cooker, cover and allow to cook on low flame for 35-40 minutes. Or can bake in oven on 180 degree for 40 minutes. After 40 minutes, uncover the pressure cooker and check the cake with a toothpick. If toothpick comes out clean it means our cake is perfectly cooked. Switch off the flame and take out the cake from pressure cooker. After cooling, demould the cake. Healthy, super soft cake is ready to eat.
