For dough 250 gram flour/ maida 60 ml oil 1 tsp salt 1 tsp carom seeds (ajwayan) Stuffing- 500gram boiled and mashed potatoes 1 tbsp red chilli powder 1 tsp salt 1 tsp aamchur powder 1/2 tsp turmeric powder 1 tsp garam masala 1 tsp cumin seeds/jeera 1 tsp fennel seeds / saunf fresh coriander green chilli Hing 1 tbp oil Oil for frying
For dough, mix maida, salt, ajwayan, oil in a vessel. Add water and prepare a semi hard dough. Cover and keep aside for 15 minutes. For stuffing, heat oil in a pan. Crackle cumin seeds, fennel seeds. Add green chillis, mashed potatoes, red chilli powder, turmeric powder, aamchur powder, garam masala, salt, hing. Mix and cook all the ingredients. Add fresh coriander, switch off the flame. Allow to cool. Uncover the dough, knead the dough for a minute. Prepare the big lemon size balls from the dough. Roll the ball in an oval shape with a rolling pin, cut in two halves. Apply water on one side of half disc, prepare a cone shape as shown in the video. Fill the stuffing and seal the ends properly. Prepare 7-8 samosas in the same way. Check the temperature of oil, the oil should be medium hot and set the flame on low. Add samosas in oil and fry. Do not touch them immediately. Now flip and fry the samosas. Now increase the flame to medium and fry the samosas till they become light brown in colour. Gently rotate the samosas and fry on medium flame. Wow!! perfect colour. Take out all the samosas from the oil. Fry second batch of samosa in the same way. Fry green chillis in hot oil. Wow!! Perfect and crispy samosas are ready to eat. Enjoy!!
