1 liter Full fat milk
100gram sugar
50gram rice
chopped dry fruits
cardamom powder
Wash iron kadai with water and wipe with a dry kitchen napkin.

Use khichdi rice for thick kheer. Clean dry rice using dry kitchen napkin to rub of the chemicals.

Heat a tsp ghee in iron wok and roast rice for1- 2 minutes on low flame.

Add 1 liter full cream milk in wok.

Allow to boil on high flame, give a good stir.

Add saffron strands, and allow to cook on medium flame. Reduce the milk till it is almost 2/3 rd of original quantity. Stir continuously. Milk has started thickening.

Scrap out the collected malai on the sides of wok and mix in milk. It will make kheer tastier and malaidaar.

The milk is thick enough and reduced. Now we have to cook for few more minutes on low flame so that milk and rice mix together nicely.

Milk and rice are mixed nicely, add 100gram sugar and cook on high flame till sugar dissolves properly. Stir continuously.

Kheer is perfectly done, add dry fruits, cardamom powder and mix, switch off the flame, It will become more thick after cooling.

Wow!! just see the thick, creamy, malaidaar kheer is ready.
