2 cups of sweet corn kernels 2 finely chopped onions 2 cup of tomato and cashew paste (3 tomatoes+1 tbsp cashews) 2 tbsp oil 1/2 cup chopped capsicum 1 tbsp red chilli flakes 1/2 tsp turmeric powder 1 tsp coriander powder 1 tsp salt fresh coriander 1 tbsp ginger-garlic paste 2 green chilli 1/2 tsp garam masala
Heat oil, crackle cumin seeds, add onions, green chilli ginger-garlic paste in oil and cook till onions become brown colour. Add red chilli powder, turmeric powder, coriander powder and cook for about a minute. Add tomato-cashew paste in wok and cook. Add salt and cover the wok. Cook till oil separates from gravy. If needed add 1/2 cup water. Stir, add sweet corn kernels, capsicum and1/2 cup of water. Add garam masala, fresh coriander and mix. Switch off the flame and sweet corn masala is ready to serve.
