For making perfect cashew powder the cashews should be clean and dry. If there is any moisture in cashews, keep them in sunlight for 2-3 hours. Use small chutney jar for making cashew flour. Fill two handful cashews in mixer jar and grind them for 10-10 seconds intervals. Do it 2-3 times. Start, stop and start stop. Stir with a spoon and grind for 2-3 times for 10 seconds intervals. Make sure the jar is not warm. It will make cashew powder oily and sticky. Sieve cashew powder and keep the leftover cashew pieces aside. Prepare cashew powder in small batches in the same way. Fill the jar with leftover cashew pieces and grind them in the same way and sieve. Use the leftover cashews in making gravies and sweets. Perfect cashew powder is ready. Store in an airtight container for 20-30 days on room temperature or in fridge for months.
