Rasmalai Cookies are very innovative and easy to make recipe. These royal cookies are very crunchy, tasty and definitely delicious. Everyone can prepare these in pressure cooker and oven using our simple recipe. These are perfect for raksha bandhan, diwali, holi or any other special occasion. 100gram butter / 1/2 cup 60gram powdered sugar / 1/3 cup 150gram maida / 1+1/4 cup 2 tbsp corn flour 2 tbsp milk powder 1 tsp Rasmalai essence Rose petals Pistachio flakes Almond flakes saffron strands 1/4 cup milk or as needed A pinch of saffron food colour 1/8 tsp baking powder
Place rose petals on a microwave safe plate and microwave them for 1-minute intervals till the rose petals become dry or you can dry them in shade for 2-3 days. Add butter and powdered sugar in a bowl and mix. Beat for 2-3 minutes. Add maida, milk powder, corn flour, saffron food colour, baking soda in butter + sugar mixture. Mix. Add rasmalai essence and 2-3 tsp milk and mix. Prepare a dough. Roll the dough with a rolling pin in 1/2 cm thick sheet. Cut the sheet with a round cutter. Place prepared cookies on a baking tray. Collect the leftover dough. You will be making more cookies from this dough. Prepare two trays for baking, one for oven and second for pressure cooker baking. Brush the cookies with saffron soaked milk. Garnish with pistachio and almonds flakes. Crush the dry rose petals and place them on cookies. Gently press all the toppings of cookies. These beautiful cookies are ready for baking. Preheat the oven for 5 minutes and bake cookies for 15 minutes on 180 degree Celsius. Preheat pressure cooker for 10 minutes on low flame. Bake rasmalai cookies on low flame for 15 minutes. Check after 15 minutes, if cookies are firm. Take out from pressure cooker. Allow to cool. Switch off the oven and take out the cookies from oven. Allow to cool for 5 minutes and transfer on a wire rack. Rasmalai Cookies are ready to eat. Store them in an airtight container.
