Lauki barfi is a very tasty and traditional sweet recipe it is also known as Bottle Gourd fudge. Lauki Barfi or bottle gourd fudge can be prepared in a pressure cooker in instantly using the milk powder. A quick and hassle-free homemade sweet recipe can be prepared on short notice for your loved ones and guest.

500gram lauki (bottle gourd) 200gram sugar 200gram milk powder 1/2 cup of milk Chopped almonds A pinch of green food color (optional)
Wash and peel the fresh bottle gourd. Grate the bottle gourd. Add grated lauki in a pressure cooker, add 1/2 cup of milk, sugar and cover the lid. Take 3-4 whistles on high flame. Allow to cool and open the lid of pressure cooker. Give a good stir and add milk powder, 1 tbsp ghee mix and allow to cook on medium to high flame till all ingredients come together. Add green food colour. (optional) It is in perfect consistency. Switch off the flame. Pour the prepared lauki mixture in a greased tray. Flatten it and garnish with chopped almonds. Keep aside for 2 hours. Cut in square pieces. Lauki barfi is ready. Store in fridge and enjoy.
