Nankhatai is one of the most favoured homemade cookies which can be eaten by all. They are very easy to make at home. These crispy, crunchy nankhatais can be made with easily available ingredients at home. Today we are going to show a very simple and healthy aata nankhatai recipe using ghee, besan and sooji. 1 cup wheat flour (genhu ka aata) 1/2 cup gram flour (besan) 1/4 cup semolina (suji/rava) 2/3 cup (125gram) powdered sugar (pisi chini) 2/3 cup (125gram) clarified butter (desi ghee) 1/2 tsp baking powder Pistachio flakes
Add clarified butter and powdered sugar in a bowl and mix nicely. Add wheat flour, gram flour, semolina, baking powder in ghee and sugar mixture. Mix nicely. Now collect all the dough with hands. Prepare small lemon size balls with the mixture. Place pistachio flakes on top of the nankhatais. For pressure cooker baking, place a parchment paper on a plate. Place prepared nankhatai balls and keep distance between them. Heat pressure cooker on a low flame for 10 minutes. Place a ring and keep nankhatai in pressure cooker for 20-25 minutes on low flame. Take out the nankhatai from pressure cooker. For oven baking, place prepared nankhatai balls on the baking tray and keep distance between them. Bake nankhatai in a preheated oven for 18-20 minutes on 180 degree Celsius. Take out the nankhatais from the oven and allow them to cool completely. Oven nankhatais and pressure cooker baked nankhatais are ready to eat. Super crispy homemade wheat flour nankhatais are perfectly baked. Store in an airtight container.
