Kulcha is a very popular and tasty Indian flatbread. It is generally accompanied by chhole. Today I have prepared paneer stuffed kulcha. These are very easy to make and can be prepared using tava or oven. Uploaded by admin on 24-May-2019.
for dough 300g maida (all-purpose flour) 50g suji/rawa (semolina) 1 Tsp. Jeera (cumin seeds) 1 Tsp. red chilli powder 1 Tsp. salt 1 Tsp. Instant dry yeast 1 Tsp. sugar ¼ Tsp. Turmeric powder 1 Tsp. butter ½ cup fresh curd 1 cup milk For stuffing :- 200g grated paneer ½ cup finely chopped onion 1 Tsp. chopped ginger 1 Tsp. chopped garlic Cumin seeds Coriander powder Red chilli powder, Dry mango powder Chopped fresh coriander 1 Tsp. oil
Heat oil Crackle cumin seeds Add chopped green chilli, ginger and garlic. Cook for 2-3minutes till onions gets transparent. Add grated paneer, dry mango powder, turmeric powder, red chilli powder, salt, black pepper powder. Cook for 2-3 minutes on high flame . Switch off the flame , Allow to cool them. For dough add flour, semolina, yeast, salt, red chilli, turmeric powder, cumin seeds, sugar, Mix. Add curd, mix nicely Add water and prepare a soft dough Grease the platform and knead the dough for 5-6 minutes. Place in the greased bowl and grease the dough too Cover with a cling film or a plate. Keep on a warm place for 40-60 minutes. Punch the dough Prepare big lemon size balls from the dough Dust the platform with dry flour Stuff the stuffing and seal it properly. Just like a paratha. Press it. Roll it a rolling pin in an oval shape. Bush with milk and butter. Place sliced onion, fresh coriander and sprinkle red chilli powder and turmeric powder over the rolled kulcha. Cover with a kitchen napkin and keep aside for 10 minutes. Same way we can cook kulchas on tawa too. Place on a hot tawa. Allow to cook on low flame for 2 minutes. Flip and cook from another side too. Flip again the kulcha is ready on tawa. Remove from tawa. Apply butter generously. Soft kulcha is ready. Uncover and apply milk and butter mixture generously. Bake in a preheated oven on 200 degrees for 10 minutes. Take out from oven. They are perfectly baked, Apply butter and enjoy the homemade hydrabadi paneer kulcha.
