1 cup = 250 ml For sponge- 3/4 cup Maida 9flour) 1/2 cup condensed milk 1/4 cup powdered sugar 1/4 cup butter 2 tbsp cocoa powder 1 tsp baking powder 1/2 tsp baking soda 1 tsp vinegar 1 tbsp coffee powder For soaking syrup - 2 tbsp powdered sugar + 2 tbsp water + 1 tsp coffee powder For frosting and decoration - 1 cup non dairy whipping cream, coffee powder For ganache - 100 gram dark chocolate, 200 ml fresh cream
Add powdered sugar and butter, condensed milk in a bowl. Mix and beat nicely. Mix coffee powder and water and keep aside. Sieve, flour, cocoa powder, baking powder in bowl. Add coffee-water, vinegar mixture in bowl. Mix with cut and fold method. Add water to make perfect cake batter consistency. Prepare a 6 inch cake tin with butter and flour. Fill the prepared cake batter in mould. Tap for 2-3 times. Bake the cake in a preheated oven for 30-35 minutes on 180 degree. Bake the cake in a preheated oven for 30-35 minutes on 180 degree. Take out the cake from oven. Check with a toothpick and allow to cool completely. Demould the cake on a wire rack. Warm fresh cream in microwave for 20 seconds. Mix chopped chocolate in hot fresh cream and keep aside for 10 minutes. After 10 minutes, mix cream and chocolate gently. Silky and smooth ganache is ready. For soaking syrup, mix coffee powder, powdered sugar and water in a bowl. Add non dairy whipping cream in a bowl. Whip the cream till soft peaks form. Add 3-4 tbsp prepared ganache, coffee powder in whipped cream. Mix and whip. Collect the whipped cream with a spatula. Place a cake board on a turntable. Place a dollop of whipped cream. Place cake on board and slice with a knife. Soak the cake slice with soaking syrup. Place whipped cream on cake slice and spread evenly. Place second cake slice, soak and cover all the cake with whipped cream. Give finishing with an offset spatula. Place a star nozzle in a piping bag. Fill the piping bag with whipped cream. Make small stars on the sides of the cake top. Prepare border on the bottom of the cake. Fill ganache in the piping bag and keep aside. Pour ganache in the center of the cake and make swirl from the back of spoon. Sprinkle sugar balls. Fill ganache in the piping bag and make drip effect on the sides of the cake wall. Place chocochips on top of the stars. Eggless choco coffee cake is ready. Cut the cake and enjoy.
