2 medium size boiled potato 100g homemade mozzarella cheese 1/2 cup dry bread crumbs 1 garlic clove 1 tsp red chilli flakes 1 tsp salt 1 tsp oregano For slurry - 1/2 cup flour (maida) 1/4 cup corn flour 1/4 tsp salt
Grate boiled potatoes, garlic and homemade mozzarella cheese. Add dry bread crumbs, oregano, chilli flakes, black pepper powder and salt in grated potato and cheese. Mix with hands. Grease a 5x5 inch mould or plate with oil. Spread potato and cheese mixture in mould and flatten it. Keep in fridge for 1 hour. Mix maida (flour), corn flour, 1/4 tsp salt in a plate. Add water and prepare a thin batter. Take mixture out from fridge and demold. Cut in long strips with a knife and divide in two parts. Take dry bread crumbs in a plate. Dip potato and cheese finger in slurry and coat with dry bread crumbs. All potato cheese fingers are ready to fry. You can also store them in fridge for later use. Fry in hot oil on high flame. Do not over crowd the pan. Take out from oil and serve hot. Just see the texture of homemade potato cheese fingers. Very crispy and cheesy.....so delicious.
