1 cup / 250 g Basmati Rice (chawal) 250 gram Cottage cheese (paneer) 1/2 cup fresh curd 1/3 cup Clarified butter/ ghee / oil 1/4 cup broken cashews 1 tbsp ginger-garlic-chilli paste 1 cup fresh spinach (palak) puree (link is in description box. 1 bay leaf 1 tsp salt 1 tsp black pepper powder
Heat clarified butter in a wok and fry cashews for few seconds. Take out the fried cashews from wok and keep aside. Fry cottage cheese till they are golden brown on high flame. Take out cottage cheese from wok and keep aside. Add bay leaf and ginger-garlic-chilli paste in remaining ghee. Cook on low flame. Add fresh spinach puree in wok and cook on low flame. Add curd and cook on high flame. Stir continuously on high flame. Add black pepper powder and salt. Add 2 cups of water in wok. (I have added leftover whey) Mix and cover. Allow to boil. Add soaked basmati rice in wok. Add sugar and cook. Mix and cover. Cook on low flame till rice are 90% cooked. Open the lid, check if rice are cooked properly. Switch off the flame. Do not open for 10-15 minutes. After 15 minutes. Open the lid, gently mix. Serve hot.
