1 cup suji/rava/semolina 1 cup milk 1 cup sugar 1 cup ghee 2 cup water Cardamom powder Few strands of saffron / kesar Chopped almonds and pistachio
Soak semolina in milk and keep aside for 10 minutes. Add 1 cup sugar and 2 cups of water in a vessel and allow to melt sugar properly. Add saffron strands and cardamom powder. Transfer the vessel on other stove and allow to boil on low flame for 5-6 minutes. Place a heavy bottom wok on stove. Add ghee and soaked semolina in wok. Stir and mix ghee and semolina. On one burner sugar syrup is in process and on another we are roasting semolina in ghee. We have to roast semolina on low to medium flame till the ghee separates from semolina and gets light brown in colour. When semolina gets perfect brown colour add 2 tbsp prepared sugar syrup in semolina and mix. It will make suji halwa grainy and delicious. Now add all the sugar syrup and mix. Cook on high flame till sugar syrup dissolves properly. Add chopped almonds and pistachio flakes. Switch off the flame. Delicious suji halwa is ready for serve. Enjoy!!!
