India loves it's Kachori and Kachori is loved by all who likes Indian style of cooking. Kachori is one of the famous and favourite street food. We prepare a lot of different varieties of kachoris. Today we are going to present a video of aloo kachoris which are layered, crispy, spicy and perfect for tea time snacks. These kachoris are filled with potatoes mashed with spicy and delicious maslalas

For dough -
250g Maida (all purpose flour)
1 tsp salt
1 tbsp ghee/oil
For stuffing -
4 medium size boiled and mashed potatoes
1/2 tsp cumin seeds (jeera)
1/2 tsp mustard seeds (rai)
1 tsp fennel seeds (saunf)
1 tbsp oil
1 tsp salt
1tbsp red chilli powder
1 tsp garam masala
1/2 tsp turmeric powder
1 tsp dry mango powder (amchur powder)
For slurry -
2 tbsp ghee+2 tbsp flour (maida)
Add flour, salt, clarified butter in a vessel and mix.

Prepare a smooth dough using water.

Knead the dough for 5 minutes and make it smooth and stretchy.

The dough should be bouncy. Cover and keep aside for 20 minutes.

For stuffing heat oil in a pan.

Crackle cumin seeds, fennel seeds and mustard seeds.

Add hing, green chilli and sauté for few seconds.

Add boiled potatoes, turmeric powder, black pepper powder, red chiili powder, dry mango powder, salt and mix on low flame. Allow to cool.

Add maida in clarified butter and mix.

After 20 minutes prepare small balls from the dough.

Roll the ball in a disc with rolling pin.

Apply ghee-maida slurry on rolled disc and fold like an envelope.

Prepare all the balls like this. Fold them and keep aside.

Now roll all the fold balls in a small square.

Place stuffing in the center and fold in a square shape as shown in the video, after it join all the corners and seal properly.

Prepare all the kachoris like this.

Heat oil on low flame for 10-25 minutes.

Add kachoris in oil and fry on low flame. don't touch immediately. Leave them undisturbed for 2-3 minutes in oil. Flip and fry all kachoris till they become crispy and light brown in colour.

Wow!! perfect colour and perfect kachoris.

Take out fried kachoris from the oil.

Enjoy the crispy, layered and spicy aloo kachori.
