1 cup basmati rice 1 +1/4 tsp salt 1/2 tsp black pepper powder 1/2 cup chopped french beans 1/2 cup chopped carrot 1/2 cup chopped cauliflower 1/2 cup chopped potato 1/2 cup chopped green peas 1/2 cup sliced onion 1 tsp shahi jeera 2 green chillis 1 bay leaf, 1star anise 1 black cardamom 3-4 cloves 2 tbsp ghee
Soak 1 bowl basmati rice for 25-30 minutes. Drain out excess water from the rice. Heat ghee in a wok. Add shahi jeera, bay leaf, cinnamon stick, black cardamom, star anise, cloves, green chillis in ghee. Add sliced onion and cook for 3 minutes on low flame. Add french beans, potato, cauliflower, carrot, green peas in a wok, stir, add 1/4 tsp salt, cover and allow to cook on low flame till vegetables cook well. Add soaked rice, 1 tsp salt, black pepper and stir gently. Add 2 cups of boiling water, stir, cover and allow to cook on low flame till all water is absorbed. Open the lid and stir with a fork. Add lemon juice, switch off the flame, cover and keep aside for 10 minutes. After 10 minutes open the lid and stir gently with a fork, you can see vegetable pulao is in perfect texture. Serve hot and enjoy the delicious vegetable pulao.
