Vada pav is a famous Mumbai street food. Every body loves to eating it. Here I given a recipe of vada pav which is oil free, stuffed and baked. It is spicy and tasty. It is a healthier version of regular vada pav. Being oil free and baked, there is no change in the taste and texture

For Dough- 300g Maida (APF), 1 1/4tsp Instant Yeast, 1tbsp Sugar, 1tsp Salt, 3tbsp Oil
For Stuffing - 3Medium-sized Boiled Potato, 1tsp Mustard Seeds, 1/4tsp Turmeric Powder, 1tsp Salt, 2tsp Oil.
8-10 Garlic Cloves, 3-4 Green Chili, 1/2 Cup Coriander, 1/4 Cup Curry Leaves
For Batter - 1Cup Gram Flour, 1pinch Soda, 1/4tsp Red Chili Powder,1/2tsp Salt
1tsp Chili Flakes
1tbsp Milk (For brushing)
For dough add maida, salt sugar and instant yeast and make a soft dough using water.

Take the dough on platform and knead it well by applying oil. If needed dust dry flour.

Collect the dough and keep it in a greased bowl for 1 hour for first proving.

Take coriander, curry leaves, garlic cloves and green chilis in a mixer jar. Grind them to make a

coarse paste. Take out the coarse paste in a bowl.

Heat oil in a pan and crackle mustard seeds.

Add coriander paste, turmeric powder, salt and boiled potato.

Mash the potatoes and cook for 5 minutes.

Allow to cool and make small balls with the potato mixture.

For batter take gram flour, salt, red chili powder and baking soda in a bowl. Make a thick batter using water.

Grease the appam maker with oil.

Dip the potato balls in the gram flour batter and keep them in appam maker. Cover with lid.

Flip them and cook for 3-4 minutes more on medium flame.

Take out the ready vadas on a plate.

Now punch the dough and once again knead it. Make a log and cut into equal pieces.

Take a piece of dough, flatten it and stuff the potato vada in it.

Keep them in a greased baking tray.

Keep distance between them and keep them covered for second proving for 20 minutes.

Milk wash them gently and sprinkle some chili flakes over the stuff buns.

Bake in a preheated oven at 200 degree celcius for 15-20 minutes.

Take out from the oven and serve
