During Christmas we all love to eat rich dry fruit cakes, so today I am going to show a simple Christmas cake recipe which is prepared with soaked fruits and without egg, without alcohol, without bleached flour, and without oven. Ingredients - 1 cup = 250ml For soaking nuts- 1/2 cup fresh orange juice, 20g raisins, 20 g black raisins, 15g chopped apricot, 10g cranberries, 20g chopped almonds, 20g chopped cashew nuts, 10g chopped pistachio, 20g fig, 20g walnuts For cake - 1 cup -2 tbsp wheat flour 2 tbsp corn flour 1/2 cup brown sugar 1/3 cup unsalted butter 1/2 tsp baking powder 1/4 tsp baking soda 1 tsp vanilla essence 1/8 tsp clove powder 1/8 tsp cinnamon powder 1/8 tsp nutmeg powder 1/2 tbsp vinegar 1/2 cup milk
For soaking, add cranberries, fig, walnuts, almonds, cashews, pistachio, black raisins, normal raisins, apricot in a bowl and mix. Add fresh orange juice, mix and cover. Keep in fridge for 18-24 hours. Add salt in pressure cooker and place a ring, cover and allow to heat on low flame for 10-15 minutes. Add brown sugar in a small mixer jar and prepare a fine powder. Add powdered sugar, butter and mix, beat till the mixture becomes creamy. Add wheat flour, corn flour, baking soda, baking powder in a sieve. Sieve in sugar-butter mixture. Add nutmeg powder, cinnamon powder, clove powder, vanilla essence and vinegar. Add soaked nuts in cake mixture. Gently mix. Gradually mix milk and prepare a thick cake batter. Grease a 5inch cake tin with butter and pour the prepared cake batter. Spread soaked dry fruits on top and tap for 2-3 times. Now cake is ready to bake. Place cake tin in pressure cooker and allow to bake for 40-50 minutes on low flame. You can also bake in a preheated oven on 180 degrees for 30 minutes. After 50 minutes, check it with a toothpick. If toothpicks comes out clean, the cake is perfectly baked. Switch off the flame, remove cake from pressure cooker. Allow to cool for 30-40 minutes. Demould the cake. Wow!! soft and spongy Christmas fruit cake is ready. You can see the texture of cake is perfect. This whole-wheat non-alcoholic Christmas fruit and nut cake is ready.
