Navabi paneer is a rich, royal and delicious cottage cheese recipe, which you can prepare during fasting days. This Gravy made without garlic, onion and prepared with almond's goodness

300gram cottage cheese (paneer) 1/2 cup grated fresh or desiccated coconut (nariyal) 2 green chillis (hari mirch) 1 bay leaf (tejpatta) 1 cinnamon stick (dal chini) 1 tsp cumin seeds (jeera) 1/4 cup melon seeds (tarbooj ke beej) Soaked 7-8 almond (soaked) 1 tsp black/white pepper powder (safed/kali mirch) 2 tbsp clarified butter/ oil (desi ghee) 1/2 cup fresh cream/ malai 1/2 fresh curd Few strands of saffron soaked in 1/4 cup hot milk 1/2 cup milk/ water
Heat ghee in a wok.

Add bay leaf, black cardamom, cinnamon stick, green chillis, chopped ginger, cumin seeds in ghee, cook for a minute.

Add soaked almonds and melon seeds cook for a minute. Add desiccated coconut. Allow to cook for 2-3 minutes on low flame.

Add salt and white or black pepper powder. Mix, switch off the flame, allow to cool.

Remove bay leaf, black cardamom, cinnamon stick from the mixture.

Transfer mixture in the jar, add 1/4 cup of water or milk and make a smooth paste.

Place the same wok on gas stove, add prepared white gravy.

Add 1/2 cup milk in the jar, and add in white gravy. Add fresh cream. Add soaked saffron. Cook on low flame for 4-5 minutes.

Again, add bay leaf, cinnamon stick and cardamom.

Add beaten fresh curd in gravy and stir continuous. Allow to cook till gravy thicken.

Add cottage cheese (paneer cubes) in prepared gravy, cover and allow to cook for 5 minutes on low flame.

Just see the texture of paneer. It is soft and looking delicious.

Switch off the flame, garnish with cashews. Serve hot
