Indian food is incomplete without pickles. There are lot of variety of pickles in India. In summers we indians are busy in making pickles and store them for a year. Today we are going to show a recipe of instant mango sweet pickle which can prepared in few minutes with few ingredients and store for a year. This is sweet and sour in taste. You can eat it with roti, paratha, chapati, puri, thepla, khakhara and etc

1Kg Raw mango (Kairi) 1Kg Sugar 1 Tbsp salt 1 Tsp black salt 1/2 Tsp Turmeric powder 1 Tbsp Red chilli powder 1 Tsp roasted cumin powder 1 Tsp Black pepper powder
This raw mango is especially available in market for murabba and chunda.

Peel it and grate.

Add salt, black salt, turmeric and mix with hands till it releases water.

Add sugar and mix again.

Add in a heavy bottomed wok and cook on low flame. Stir and cook on low flame till sugar dissolves properly and one thread consistency sugar syrup forms.

It thickens now.

Check the sugar syrup with fingers. You can see the one thread between the fingers.

Switch off the flame and allow to cool completely.

Add red chilli powder, cumin powder, black pepper powder and mix well.

Instant raw mango jam is ready. Fill in glass jar and store in fridge for a year
