1/4 Cup whole wheat flour (aata) 1/4 Cup gram flour (besan) 1/4 Cup semolina (sooji / rava) 3/4 Cup sugar 100g Clarified butter (ghee) 50g Khoya / mawa 500ml hot milk 7-8 Chopped almonds 1/2 Tsp cardamom powder
Add clarified butter in a heavy bottom pan. Add wheat flour and roast for 2-3 minutes on low to medium flame. Add semolina and roast for 2-3 minutes. Add gram flour and roast for 10 minutes on low to medium flame or till aroma comes from the mixture and turns light brown. Add khoya/ mawa and roast for 3 minutes on low flame. Gradually add hot milk and stir continuously. The flame should be on low. This makes it grainy and delicious. Stir it continuously. Roast till ghee separates. Add sugar and stir on high flame till sugar dissolves properly. You can see the texture of halwa. Ghee is released from halwa and now our delicious halwa is ready. Switch off the flame, add cardamom powder and chopped almond
