250g moth dal powder (matki dal ka aata/dew bean flour) 50g besan (gram flour) 1 Tsp black pepper powder 1 Tsp salt 1 Cloves Powder (laung ka powder) 1/2 Tsp ilayachi powder (cardamom) 1/2 Tsp dry ginger powder 1 Tsp Red Chilli powder 25ml oil A pinch of baking soda 1/8 Tsp Nutmeg powder
This is whole moth and the other is split moth dal which I have ground in flour.

Add moth flour, besan, salt, clove powder, black pepper powder, red chilli powder, dry ginger powder, cardamom powder, baking soda and nutmeg in a vessel.

Mix all the ingredients.

Add oil and mix again.

Gradually add water and make a soft dough.

Grease hands with oil and divide the dough in two parts.

This is a sev maker, place a fine hole disc in the sev maker.

Fill the sev maker with prepared dough. Cover with lid.

Fry in hot oil.

Flip and fry for a minute. The flame should be on medium.

Take out and allow to cool.

Fry all the bikaneri bhujia like this.

For thick sev place a thick hole disc in sev maker. Pipe out and fry on medium flame.

Flip and fry for 2-3 from other side too.

Take out and allow to cool completely.

In this way I have prepared both sevs.

Gently crush with hands.

In this way we can prepare crispy and delicious bikaneri bhujia in an easy manner at home.

Mix and store in an airtight container.
