A classic Indian sweet is very famous and is enjoyed in all festivities and celebrations. Here we have prepared gulabjamuns using sweet potatoes which have many nutritional benifits during fasting days. 1Cup Boiled & grated sweet Potato# 1/2 Cup Milk powder # 1/4 Cup buckwheat flour (Kuttu ka atta)# 1/8 Tsp Baking soda # 1/2 Tsp cardamom powder# 400gram sugar
For sugar syrup:- Add sugar and 1 cup of water and allow to dissolve sugar completely. Allow to cook for 7-8 minutes on low flame. We want less than one thread sugar syrup. Switch off the flame and add 1/4 tsp cardamom powder. Add boiled & grated sweet potato, milk powder, buckwheat flour, cardamom powder, baking soda in a vessel. Note :- For perfect gulabjamun don't over boil to sweet potatoes. Mix with hands and prepare a soft and smooth dough. Dough is ready. Prepare small lemon size balls from the dough. Fry in medium hot ghee/oil on low flame till they turn in to dark brown colour. Continuously roll them and fry. Take them out and immediately add in hot sugar syrup. Cover and keep aside for 30 minutes. See how soft and spongy they are.
