2 tbsp oil 2-3 tbsp gram flour (besan) 2 tsp red chili powder 1 tsp aamchur powder (Dry Mango Powder) 1/2 tsp garam masala 1 tsp fennel seeds 1 tsp salt or to taste 1/2 tsp mustard seeds 1/2 tsp Carom seeds (ajwayan) 1/4 tsp turmeric powder 2 chopped green chili 3 cup whole wheat flour 1/2 tsp salt 1/2 kg grated louki (bottle gourd
Heat oil in a pan, crackle mustard seeds, cumin seeds, fennel seeds and carom seeds. Add green chili, gram flour and roast it for 5 minutes on low flame. Add red chili powder, salt, turmeric powder and mix well. Add grated louki and cook on medium high flame for 10 minutes. Add garam masala, aamchur powder and mix well. Allow to cool and keep in fridge for 30 minutes. For dough add salt and make a soft dough using water. Add 1tsp ghee and grease the dough. Add 1tsp ghee and grease the dough. Take out a handfull dough, flatten it and put 3 tbsp stuffing in it and cover it from all the sides and give a ball shape. Dust it with dry flour and roll it with rolling pin. Not too thin neither thick. Roast it on hot tava and apply oil both sides. Roast till it becomes crispy on low flame
