For Cutlet 2 Cup Boiled rice (You can use leftover rice) 2 Boiled potatoes 1/2 Cup finely chopped onions 1/2 Cup grated carrot 1/4 Cup dry bread crumbs 1-2 Chopped green chilli 1Tbsp Grated ginger 1Tsp Chilli flakes 1Tbsp Oregano 1Tsp Red chilli Powder 1/2 tsp Garam Masala, 1Tsp Salt 1Tsp Garlic powder 1Tsp Dry mango powder (aamchur powder) For batter - 1/2 Cup Maida(All Purpose Flour), 1/4 Cup Corn flour, 1/4tsp salt. For Covering - 1/2 Cup Dry bread crumbs
Grate the potatoes. Add boiled rice, dry bread crumbs, onion, carrot, green chilli, ginger and all spices. Mix with hands. Take a handful dough and make ball and flatten it with wet hands. For batter add maida, corn flour, salt in a bowl. Gradually add water and make a thin batter. Now add dry bread crumbs on a plate. Dip prepared patties in batter and cover with dry bread crumbs. Cover and keep them in fridge for 30-40 minutes. From this process the cutlet will soak less oil while frying. Fry in hot oil on high flame. Take out and serve hot
