1/4 Cup Chana dal (soak for 2 hours0 2 cups finely chopped spinach 1 cup khatta green saag 1/2 Cup Chopped carrots 1/2 Cup Lauki 1 chopped potato 2 Medium size chopped baingan 1 tbsp grated ginger 2 chopped green chilis 2 whole red chilis 2 Chopped tomatoes 1 tbsp Ghee 1 tsp Red chili powder 1 tsp Coriander powder 1 tsp Salt
Heat a tbsp ghee in a pressure cooker, add soaked chana dal and roast on low flame for 3-4 minutes. Add carrots, potatoes, brinjals and roast for more 2 minutes, add tomatoes, spinach, khatta saag, ginger, green chilis and again roast for 3-4 minutes on low flame. Add red chili powder, coriander powder, salt and mix. Add 1/2 cup of water, close the lid and take 2-3 whistles on medium flame. Now open the lid and mash all the cooked vegetables and dal with a masher. For tadka heat a tbsp ghee in a pan, crackle cumin seeds, add dry red chilis, one chopped onion, cook on low flame add in prepared bhaji and mix. Enjoy with rice and roti.
